Best Energy Bites

I hope you’re having a lovely spring season. I have been busy juggling a full-time temporary job as a credentialed high school dance teacher and running my online business. To keep my energy levels stable and fuel myself in between meals, these energy bites have been a total life saver. I hope you’ll try them and let me know what you think. There are just a few simple ingredients to mix together and pop in your freezer. You can mix and match any ingredients you prefer.

Ingredients

Dry Ingredients

  • 1 cup oat flour

  • 3 tablespoons of chia seeds

  • 3 tablespoons of hemp seeds

  • 1/2 cup of chopped nuts and seeds of choice (I like to add walnuts, pumpkin seeds, and sunflower seeds)

  • 5 dates pitted and chopped

  • 1 tablespoon of chocolate chips

  • Pinch of sea salt

Wet Ingredients

  • 1 cup of nut or seed butter

  • 1/4 cup of maple syrup

  • 2 teaspoons of vanilla

Process

  1. Mix wet ingredients together in a large mixing bowl

  2. Add the dry ingredients to the wet ingredients

  3. Mix until a dough-like ball forms

  4. Place dough in the refrigerator for 5 minutes to firm up

  5. With the chilled dough, form small round balls with your hands (be patient with this step)

  6. Store in a container in the fridge for up to 5 days or freezer for 2 weeks

  7. Enjoy! =)
