Best Energy Bites

I hope you’re having a lovely spring season. I have been busy juggling a full-time temporary job as a credentialed high school dance teacher and running my online business. To keep my energy levels stable and fuel myself in between meals, these energy bites have been a total life saver. I hope you’ll try them and let me know what you think. There are just a few simple ingredients to mix together and pop in your freezer. You can mix and match any ingredients you prefer.
Ingredients
Dry Ingredients
1 cup oat flour
3 tablespoons of chia seeds
3 tablespoons of hemp seeds
1/2 cup of chopped nuts and seeds of choice (I like to add walnuts, pumpkin seeds, and sunflower seeds)
5 dates pitted and chopped
1 tablespoon of chocolate chips
Pinch of sea salt
Wet Ingredients
1 cup of nut or seed butter
1/4 cup of maple syrup
2 teaspoons of vanilla
Process
Mix wet ingredients together in a large mixing bowl
Add the dry ingredients to the wet ingredients
Mix until a dough-like ball forms
Place dough in the refrigerator for 5 minutes to firm up
With the chilled dough, form small round balls with your hands (be patient with this step)
Store in a container in the fridge for up to 5 days or freezer for 2 weeks
